The Iberian pig grazes and roams freely in the meadows of Extremadura. This pig is a black, dark brown or white Iberian breed. This "black leg" pig has been well conserved throughout the ages to reach the best quality levels. The Iberian pig, which is given a strict diet, produces a layer of fat between the muscles that gives the meat unbeatable quality. A rigorous GENETIC selection and an appropriate DIET are essential to obtain these results. PERMANENT RECOGNISED AND APPROVED QUALITY can only be guaranteed in the final products if these factors are controlled.
